Job Description:
A prestigious 4-star safari lodge, boasting over 70 rooms, is on the lookout for an industrious and experienced Hotel Food and Beverage (F&B) Controller. This dynamic role requires the expertise and precision of a seasoned Cost Controller, as you will be the backbone for managing and optimizing costs within our diverse operations.
Key Responsibilities:

Stock Reconciliation and Monitoring:
- Conduct daily reconciliation of stock usage across all outlets and units.
- Manage and monitor stock throughout the month, ensuring optimal stock levels and minimizing wastage.

Stock Takes and Reports:
- Perform bi-monthly stock takes for food & beverage, spa, and curio shop.
- Input stock figures and compile accurate cost reports to facilitate smooth operation and decision making.

Purchases and Orders:
- Handle purchases and place orders for F&B, spa, and curio shop.
- Maintain excellent relationships with suppliers to ensure quality and timely delivery.

System Knowledge:
- Utilize Micros Materials Control, Shopkeeper, Restaurateur, or similar systems for effective inventory management.
- Coordination and Reporting:
- Report directly to the Financial Manager with comprehensive reports and analysis.
- Provide insights and recommendations for cost savings and efficiency improvements.
Essential Requirements:
To ensure success in this position, you must meet the following criteria:

Experience:
- Minimum of 3 years’ recent experience in a Cost Control position within a 4 or 5-star hotel or a retail operation.
- Proven track record of managing costs and monitoring stock effectively.

Skills and Knowledge:
- Excellent working knowledge of inventory control systems such as Micros Materials Control, Shopkeeper, or Restaurateur.
- Strong analytical skills and attention to detail for inputting stock figures and compiling cost reports.
- References:
- You must provide recent contactable references from your last two direct superiors prior to your current employer.
